Tasting Notes

Aroma:

Sweet, floral, and malty, evolving into rum-soaked raisins and chocolate.

Palate:

Smooth and warming with dried fruits, brown sugar, and candied citrus.

Finish:

A lingering balance of oak, spice, and dried fruit.

During the Middle Jurassic period in Earth's history, approximately 175 million years ago, the breakup of the ancient supercontinent Gondwana led to the injection of dolerite magma as subsurface dykes and sills across most of Tasmania. As this magma cooled and crystallized, regular vertical cracks propagated through the sills, forming distinctive polygonal columns.

Cape Huay is the home of Tasmania’s spectacular columns and sea stacks.

Craftsmanship

This small batch Single Malt Whisky is crafted with a focus on matching the finest Tasmanian ingredients with an artisan approach to distillation that utilises traditional methods, Tasmania's unique environment, and patience to craft a unique and flavourful whisky. 

Double distilled in copper pot stills, the spirit is elegant with floral and fruity flavours balanced with the rich malt character of the Tasmanian grown barley. 

This whisky has been matured in carefully selected Australian Apera Sherry casks that build the citrus peel, spice, and oak character of the whisky before being finished in Spanish Oloroso and Pedro Ximenez Sherry casks to further develop the sweetness and add depth of flavour with dried fruits and nuts elements. 

These casks have been carefully selected and married together to create a unique small batch release that has been shaped by, and reflects, the pristine nature of Tasmania’s environment.
